Yes coffee beans are typically roasted before being placed into a bag, but they still emit gases after bagging and during the shipping process. These gases can last for up to two weeks. If there was no valve on your coffee bag then these gases would have no where to go and would be forced to remain in the same bag as your coffee. This can make for some stale and gross coffee.

This hole makes perfect sense for a coffee pouch because it does exactly what it was designed to do. Little holes will not work, because they will get clogged with dirt and blocked. The gases would then fill up the bag of coffee and then possibly burst. The vacuum seal works to let air out without letting air in. This protects your coffee and the bag its in.
The next time you buy coffee look really close at the bag. You will notice that each one has a vacuum seal on it. Take time to look at each seal and see where it is placed.
